Raw Stuffed Tomatoes



Hey Guys!!! I am So happy to have survived Hurricane Irma. I hope you and your loved ones are safe and sound and for those of you with kiddos... I hope your power has been restored! 

This week has been crazy so from my perspective it's time to make food. My mom always made food as comfort. And to remind us that FAMILY is EVERYTHING, she would have people over or we would go to their houses (specially during a hurricane... my house is made out of wood and metal ceiling).

Now for those of you on detox.. CONGRATULATIONS you have survived the hurricane without non- perishables probably for the very first time.  So this recipe is made for those missing some more freshness in their lives. It is so yummy and fast and simple.

I usually make these to spice up my salad it give it the sexiness that it needs! Here is the deal though you need juicy but firm tomatoes I used Roma tomatoes because they look so cute when stuffed but get creative use beef tomatoes, heirloom tomatoes (oh that would be pretty!) or even jubilee tomatoes if you have them available.

Then pick the ingredients you want to stuff it with you can use peppers, onion, garlic (basic) or mushrooms, garlic, basil & balsamic... or just about anything you can think goes together. Don't forget to balance out some of the sweet acidity of the tomatoes (lol i know how it sounds but I think you get it) with some fresh herbs .

Yes like most of the detox recipes this has to have avocado, potato or squash to stuff with. You need a creamy center to a firm tomato. In this particular case I used avocado so that it its raw but you get the gist...

couple of tips:

To remove the insides I used a tea spoon the kind you use to mix the honey into the tea. That tiny spoon gave me the control I needed to not brake the tomato.

If you have no patience for mixing and mashing add all ingredients to a food processor and pulse until creamy.  

If you are using a roma tomato only about 2 tbsp fits inside 

Use the whole tomato so what you remove add right back to the mixture that you use to fill it with!
