Blueberry fudge





Blueberries are an incredible ingredient it has amazing properties. This little fruit softens dry skin, boosts your brain, helps UTI's and it may even prevent cancer. The best part about this recipe is the combination and burst of flavor you get form just this tiny little "dessert" or "snack". I put quotation marks because I eat it anytime I want... Don't tell my husband...😉

So now to the interesting ingredient: Creamed coconut, no not coconut cream!

Creamed coconut  is the unsweetened dehydrated fresh meat of a mature coconut, ground to a semi-solid white creamy paste, yes only that there is no other element to this mysterious ingredient. It is quite helpful to achieve consistencies of fudge and creamy pie. I am over the moon with it I absolutely love it! But it can be a little bit grainy if you don't melt it and mix it properly.

These two would be fine by them selves but there is nothing like the combination of raw honey and lemon. These two ingredients help with flavor and it brings a whole other benefit to the table. It aids in the digestion of foods and so many other things that it is really wonderful combo!

Ive basically told you how to make it already but how about I really tell you. I don't want you to think I came up with this I found it on Pinterest it was so good so now I need to share with you guys but Here is the link to the original one, I just kind of made it my own. Tools:
High-speed Blender or food processor/ Bowl/ Baking sheet/ Parchment Paper/ silicone spatula/ Knife/ hot water/ medium sized bowl/ measuring cups and spoons  



Ingredients:

1/2 - 3/4  cup Blueberries depends on how big and how purple you want your fudge! (I use fresh ones but frozen organic ones are fine too)

1 Bar of creamed coconut

1/2 Teaspoon of lemon juice and zest the lemons you use to enhance the flavor (please don't use the already squeezed lemon juice it just doesn't work)

1 heaping teaspoon of Raw Honey


Directions:
1. If you are using the frozen blueberries make sure to defrost them

2.  Open the box of the creamed coconut, keep it in the plastic.

3. Put the hot water into a bowl and place the creamed coconut in the plastic into the bowl of hot water. (this will melt your creamed coconut with out coking it)

4. As soon as you can see the creamed coconut becoming more of a liquid than a solid, take out your high-speed blender or your food processor. Add the blueberries, lemon juice and honey to the machine and mix in the lowest setting. (If its a food processor: pulse until everything is mixed together. If its a blender a couple of seconds will do the job.)

5. Add the creamed coconut to the blender or processor and blend until everything is mixed together properly.

6. Prepare a 6 X 10 (if you don't have one just use a bigger one it will just make the fudge thinner) Baking sheet with parchment paper and spread the liquid fudge mixture onto the pan. Use the spatula to make it so you don't leave any deliciousness behind.
 
7. Place the baking sheet in the freezer for about 1-2 hours. This is for the fudge to set.

8. Take it out of the freezer and cut into squares, triangles, flower what ever your heart desires.

9. If your will not eat right away, using an air tight container you can place each piece divided by parchment paper (this is for them not to stick to each other) and then refrigerate.
