Cauliflower Tabbouleh

Hey guys!  I've been so crazy lately that I haven't posted since february!!! I'm so sorry this recipe I'm posting today might be exactly what you need. It is easy, simple and the ingredients are probably the most basic you could ever use.  The best part is that I can eat this for DAYS! It is simply divine.  So the main reason I made this was because I go to the green and yellow farmers market in Hollywood, FL (this is a non paid announcement LOL I just love this place so much!) almost every weekend and there is this stand where they make tabbouleh. I had never had tabbouleh before in my life but this beautiful salad had couscous in it. So I wanted to be able to give our detox peeps a wonderful work of art but it had the couscous... Yes I was disappointed for like a minute and then realized why not find a recipe of Raw Tabbouleh.  After much research I found a bunch but so far this is the best version of this recipe that I can make that is detox friendly....

Delicious salad dressings

Salad can be so usual during detox. This is the first thing people think about when we tell them they will only be allowed to eat fruits and vegetables. The thing is there are so many varieties of salads and so many dressings out there that make this restriction a little better. Most of the time we are so caught up into the same food every day that we can get bored, (unless you're Rosanne she is my hero. She can eat the same thing over and over and over without being bored or growing tired of it) I need my variety (LOL).  This post is for all of you "bored and tired" peeps on detox. Here is how to make the perfect detox dressings that can contain similar ingredients but tasting COMPLETELY DIFFERENT! As we know during detox our favorite ingredient is usually avocado. Blueberry fudge

Blueberries are an incredible ingredient it has amazing properties. This little fruit softens dry skin, boosts your brain, helps UTI's and it may even prevent cancer. The best part about this recipe is the combination and burst of flavor you get form just this tiny little "dessert" or "snack". I put quotation marks because I eat it anytime I want... Don't tell my husband...😉 So now to the interesting ingredient: Creamed coconut, no not coconut cream! Creamed coconut  is the unsweetened dehydrated fresh meat of a mature coconut, ground to a semi-solid white creamy paste, yes only that there is no other element to this mysterious ingredient. It is quite helpful to achieve consistencies of fudge and creamy pie. I am over the moon with it I absolutely love it! But it can be a little bit grainy if you don't melt it and mix it properly. Mushroom ceviche!!!

Ceviche: A South American dish of marinated raw fish or seafood, typically garnished and served as an appetizer. In our case we want to make it our of mushrooms and the mushrooms to use can be to your discretion.  The thing about this amazing recipe is that it is so versatile you can use so many different mushrooms that it can blow your mind.  In my case I used button mushrooms because its what I had in hand when i decided to make this amazing thing! I served mine with dehydrated plantain chips because... come on it's delicious! So as a side note I have added the recipe for them. Mushrooms provide many of the nutritional attributes of produce, as well as attributes more commonly found in meat, beans or grains.
